Spanish cuisine centers on fresh, high-quality ingredients and social eating. Tapas culture — small plates shared over drinks — is at its best in Madrid, Seville, and Granada (where tapas are often free with drinks). Jamón ibérico, patatas bravas, gambas al ajillo, and croquetas are classics.

San Sebastian (Donostia) has more Michelin stars per capita than almost anywhere on earth. Paella originated in Valencia — the authentic version is made with rabbit and chicken, not seafood. Churros with thick chocolate for breakfast, and sangria or vermouth as aperitifs.
